New Mexican restaurant opens in Cordova

CORDOVA -- Cholula Mexican Restaurant recently opened in the Great River Mart building on Illinois 84 in Cordova.

It's co-owned by Erika Coyomani and her husband, Valentin, and named after the town in Mexico where Valentin Coyomani grew up.

Mrs. Coyomani said the couple had driven through Cordova many times and were attracted by the atmosphere. "The people are very nice and welcomed us with open arms."

Cholula serves freshly prepared Mexican food made from scratch by chef Valentin and chefs Nicolas and Sylvia Ramirez, using family recipes.

Appetizers include nachos, cheese poppers and onion rings. Ms. Coyomani said the most popular dishes are tacos, enchiladas, chimichangas and taco salads.

Cholula also offers American food such as cheeseburgers, chicken fingers, french fries and onion rings. They also offer a variety of soups and several desserts, such as sundaes, fried ice cream and fruit chimichangas with ice cream.

A "kid's menu" for those 10 and younger includes cheeseburgers, corn dogs, chicken tenders, grilled cheese, tacos and enchiladas with rice and beans.

Mrs. Coyomani said many people have asked them to offer breakfast, which they plan to start in early November.

Cholula Mexican Restaurant is open from 11 a.m. to 8 p.m. Monday, Tuesday, Thursday, Friday and Saturday and 11 a.m. to 2:30 p.m. Wednesday. They are closed on Sunday.
