Country Style Chicken Dinner

Ingredients

3 cups frozen hash-brown potatoes (cubed kind)
1 can (2.8 ounces) french fried onions
1 can (10-3/4 ounces) cream of chicken soup
1 cup milk
1 cup sour cream (optional)
6 slices (3/4 ounce each) processed American cheese
2 to 4 boneless skinless chicken breasts, thawed if frozen
1 package (10 ounces) frozen mixed vegetables, thawed

Instructions

Preheat oven to 375 degrees. In 9x13-inch baking dish, combine frozen potatoes and 1/2 can french fried onions. In small bowl, blend soup and milk and sour cream, if desired Pour half of soup mixture over potato mixture in baking dish. Layer cheese slices. Top with chicken. Pour remaining soup mixture over chicken. Bake, uncovered, at 375 degrees for 35 minutes. Remove chicken and stir in mixed vegetables. Turn chicken over and put back on top. Bake, uncovered, for 20 minutes or until chicken is done. Stir potato mixture and top chicken with remaining onions. Bake, uncovered, for 3 minutes or until onions are brown. Let stand 15 minutes. Makes 4 to 6 servings.

Although she's been teaching for 43 years at the school, Miss Dayfound a new way of arriving at the school this morning. At 7:30 a.m., a police squad carpulled up in front of Miss Day's home and escorted her to school. A caravan of students' cars joined the procession along the way.

River Day Saturday in Leach Park, Bettendorf. A 5K run, wind surfing, a canoe race, hogcalling and more will round out the day under the Interstate 74 bridge.
