Croatian Chicken Stew (Paprikash)

Ingredients

1 chicken fryer, cut up
1 tablespoon oil
1 large onion, cut up
1 can (28 ounces) stewed tomatoes
1 jar (32 ounces) V-8 vegetable juice
4 ribs celery, cut up
1 package baby carrots, cut in half
7 potatoes, cut up

Instructions

In 1 tablespoon oil, saute chicken and onion in soup kettle. Add stewed tomatoes, V-8 juice, celery and carrots. When carrots start to soften, add potatoes and continue cooking for about 1 hour or until potatoes are done.
