Cheese and Onion Enchiladas

Ingredients

4 onions, chopped
3 jalapeno peppers, seeded and chopped
2 tablespoons olive oil
2 teaspoons ground cumin
2 tablespoons chili powder
12 corn tortillas
2 pounds shredded cheddar cheese
2 cans (8 ounces) enchilada sauce

Instructions

Preheat oven to 350 degrees. Butter a baking dish. In a large skillet saute onions and jalapenos in olive oil for 5 minutes. Add cumin and chili powder. Saute 5 minutes. In small nonstick pan heat each tortilla until soft. To each tortilla add 2 tablespoons onion mixture and 3 tablespoons cheese. Roll up and place seam side down in prepared dish. Pour enchilada sauce over top. Sprinkle with remaining cheese and onion mixture. Cover with foil. Bake for 20 minutes.
