Apricot Swiss Steak

Ingredients

4 pounds round steak, 1/2 to 1-inch thick
Olive oil
Salt and pepper
1 large white onion
1 cup Smucker's Apricot Preserves
1 can (12 ounces) Pepsi or Coke

Instructions

Cut steak into individual pieces and sprinkle with salt and pepper to taste. Brown in olive oil. When browned, place in 13x9x2-inch baking dish. Cut onion into slices about 1/8-inch thick and place on top of steak. Mix preserves and Pepsi or Coke together with wire whisk and pour over steak. Place in the oven to bake at 325 degrees for two hours. Makes 4 to 6 servings.

1964 -- 50 years ago: The Argus "walked" to a 13-0 victory over American Container Corporation last night to clinch the championship of Rock Island's A Softball League at Northwest Douglas Park.
1989 -- 25 years ago: The Immediate Care Center emergency medical office at South Park Mall is moving back to United Medical Center on Sept. 1. After nearly six years in operation at the mall, Care Center employees are upset by UMC's decision. The center is used by 700 to 800 people each month.
