Sweet Potato Souffle

Great with Thanksgiving Turkey!

Ingredients

1/3 stick margarine
3 cups mashed sweet potatoes (can be canned or fresh and then cooked)
1 cup white sugar
1/2 teaspoon salt
1/2 cup milk
1 tablespoon orange extract
2 eggs, beaten
Mixed Topping:
3/4 cup brown sugar
3/4 cup chopped nuts
1/2 cup flour
1/3 stick margarine

Instructions

Melt margarine and mix with mashed potatoes. Add sugar, salt, milk and flavoring. Fold beaten eggs into potato mixture. Place in 10-inch quiche pan. Mix together topping ingredients and sprinkle over potatoes. Baked uncovered for 35 minutes at 350 degrees.
