Pineapple Chicken

3 pounds chicken, cup into serving pieces
1 cup pineapple juice
1 tablespoon soy sauce
1/4 teaspoon brown sugar
1 tablespoon cornstarch
1/4 teaspoon ground ginger
1 can (8 ounces) pineapple chunks

Brown chicken in a skillet. Combine sauce ingredients in a saucepan and cook until it thickens. Pour sauce over chicken and simmer until chicken is tender. Serve over rice.
