Banana Nut Bread

Ingredients

1 cup shortening
2-1/2 cups white sugar
1 tablespoon vanilla extract
4 eggs
3-1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
5 ripe bananas
1-1/2 cups chopped walnuts

Instructions

Preheat oven to 300 degrees. In a large bowl, beat shortening and sugar until blended. Mix in vanilla and eggs. Blend in flour, baking soda and salt. Add bananas and then walnuts. Divide batter between 2 well greased and floured 9x5-inch loaf pans. Bake at 300 degrees for one hour or until a toothpick inserted into the center comes out clean. Makes 2 loaves.
