Skillet Onions

So simple and delicious anytime, and especially appropriate at harvest time.

2 tablespoons olive or salad oil
2 tablespoons butter
4 jumbo onions (about 1-1/4 pounds each), thickly sliced
Salt
2 tablespoons brown sugar
1 tablespoon cider vinegar

Heat oil and butter in a heavy skillet (cast-iron works well). Add the onions and saute until onions are soft. Add the brown sugar and cider vinegar and continue cooking, stirring constantly, until onions are tender and caramelized.
