Diabetic Applesauce Cake

1 box (15 ounces) raisins
2 cups water
2 cups flour
1 cup unsweetened applesauce
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
2 eggs, beaten
2 tablespoons sugar substitute
3/4 cup oil
1 teaspoon vanilla
1 cup chopped nuts

Combine raisins and water in 2-quart sauce pan. Boil until water is absorbed. Cool. Preheat oven to 350 degrees. Grease and flour a 9x5-inch loaf pan. In large mixing bowl, combine all ingredients. Stir well. Pour into prepared pan. Bake 1 hour.
