Melon Bacon Wraps

Ingredients

1 jar (10-ounces) sweet pickled watermelon rind
1 pound (16 ounces) regular cut bacon
1 box of colored round toothpicks

Instructions

Drain liquid from rinds and cut larger pieces in half. Cut bacon strips in half. Wrap each rind with 1/2 strip of bacon and secure with toothpick. Lay on ungreased jelly-roll pan, uncovered. Place under broiler until bacon is done. Remove to a serving plate. Eat while warm.
