Basic Sausage Mix

The following recipe is a nice addition to a gift basket you can create for your favorite arm-chair sports fan. Include a variety of snack crackers, the sausage log, some spicy mustard and cheese of your choice.

Ingredients

Basic sausage:
5 pounds of ground beef
5 tablespoons Tender Quick (found in stores next to salt)
2 teaspoons coarse ground black pepper
Variations:
Smokey Summer Sausage:
2 teaspoons garlic powder
2 teaspoons mustard
1 tablespoon liquid smoke
Italian Sausage:
1 teaspoons sugar
1 teaspoon cayenne pepper
2 teaspoons cracked fennel seeds
2 teaspoons coriander
Salami sausage:
2 teaspoons ground white pepper
1/2 teaspoon ginger
1/2 teaspoon garlic powder

Instructions

Mix the beef, Tender Quick and spices for specific variation thoroughly; cover and refrigerate for 24 hours. To make sausage, shape into 5 rolls, about 1 pound each. Bake on a broiler rack in oven for 2 hours and 25 minutes at 275 degrees. Cool, slice, and serve.

1963 -- 50 years ago: Some 8,000 people filed through the gates of Rock Island Arsenal on Saturday to view a display of a part of the nation's armed strength. The occasion was theannual observance of Armed Forces Day.
1988 -- 25 years ago: Willis Kuschmann, of Moline, who already has won his laurels as oneof the most artistic men in the Quad-Cities area, has a new hobby. He is deeply involvedin miniature railroading. At the age of 88, when many other seniors are dozing in theirchairs or sitting before the television, Mr. Kuschmann is planning and working on hiscollection.
