Sausage Skillet Roma

Ingredients

2 medium zucchini (about 1/2 pound), cut in half lengthwise
1 pound bulk sausage
1 can (10-3/4 ounces) condensed cream of mushroom soup
1/2 cup thinly sliced onion
1 medium clove garlic, minced
1 medium tomato, cut in wedges

Instructions

Cut squash into 1-inch pieces. Shape sausage into meatballs. In skillet, brown sausage; pour off fat. Add remaining ingredients except tomato. Cover; cook over low heat 15 minutes or until done. Stir occasionally. Add tomatoes; cook 5 minutes more. Makes about 4 cups.
