Vegetable Beef Barley Soup

1 pound ground beef
1 small onion, chopped
1 glove garlic, minced
4 cubes beef bouillon
5 cups water
1 can (16 ounces) diced tomatoes
3 (16 ounces) mixed vegetables, drained
2/3 cup dried quick cooking barley
1/2 teaspoon salt
1/4 teaspoon pepper

Brown ground beef with onion. Drain. Add all ingredients except barley. Bring to a boil. Reduce heat & simmer 10 minutes. Add barley, simmer an additional 15 minutes.
Yield 8 cups
