Cheesy Vegetable Soup

You could also add chopped broccoli or cabbage if you like.

5 ounces raw potatoes (about 2 potatoes)
1 cup shredded carrots
1/2 cup chopped celery
1/2 cup diced onion
1-3/4 cups chicken broth
2 cups milk
4-1/2 cups shredded cheddar cheese
2 tablespoons corn starch
1/2 teaspoon each salt and pepper

Cook vegetables in broth until tender. While cooking, shake together corn starch and milk. Stir into veggies; simmer until thick. Add cheese and stir. Makes 4 servings.
