Pineapple Nut Cookies

This an old recipe of my mothers.

Ingredients

3/4 cup margarine
1-1/2 cups brown sugar
2 eggs beaten
1 teaspoon vanilla
1/2 teaspoon lemon extract
1/2 cups chopped walnuts
2/3 cup undrained crushed pineapple
3-1/2 cups flour
1 teaspoon soda
1 teaspoon baking powder

Instructions

Preheat oven to 375 degrees. Using electric mixer, cream margarine and brown sugar in medium size mixing bowl. Add eggs, vanilla and lemon extract. Add walnuts and pineapple, when mixed add flour with baking powder and soda. Drop by teaspoonfuls on greased cookie sheet. Bake 12 to 15 minutes until light brown.
