Rhubarb Nut Bread

Ingredients

1-1/2 cups light brown sugar, packed
2/3 cups cooking oil
1 egg
1 teaspoon vanilla
1 cup buttermilk
1 teaspoon salt
1 teaspoon baking soda
2-1/2 cups flour
1-1/2 cups diced fresh rhubarb
1/2 cup chopped nuts
1/4 to 1/2 cup sugar
1 tablespoon butter

Instructions

Preheat oven to 350 degrees. Mix oil and sugar either by hand or on low speed of mixer. Add egg, vanilla and milk. Sift dry ingredients and add to mixture. Fold in diced rhubarb and nuts. Divide batter and pour into 2 well greased and floured bread pans. Mix sugar and butter and sprinkle over top of batter. Bake for 55 to 60 minutes.
