Hot Rice Salad

A new favorite for a special meal.

Ingredients

1/2 pound bacon
1/2 cup minced onion
1/4 cup minced green pepper
1 can (4 ounces) mushrooms
1/2 cup minced celery
1-1/2 cups hot cooked rice
2 tablespoons mayonnaise
3 hard-cooked eggs, sliced

Instructions

Fry bacon until crisp; drain. Pour off drippings. Crumble bacon into bite-size pieces. Add onion, green pepper, mushrooms and celery. Saute until soft. Add rice, mayonnaise and sliced eggs. Place in 1-1/2 quart greased casserole. Bake uncovered at 450 degrees for 10 minutes.
