Zucchini Bread

3 eggs
1 cup sugar
1/2 cup oil
1 teaspoon vanilla
2 cups flour
1 teaspoon salt
1/2 teaspoon baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
2 cups grated zucchini
1 cup nuts or soaked raisins

Beat eggs and sugar together. Beat in oil. Add vanilla. Mix flour with salt, baking powder, baking soda and cinnamon. Blend flour mixture into egg mixture. Blend in nuts and/or raisins and grated zucchini. Pour mixture into two greased and floured 9x5-inch loaf pans. Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean. Cool before removing from pans.
