Yellow Split Pea Soup

Ingredients

2-1/2 cups (1 pound) yellow split peas (do not substitute green peas)
2 quarts water
1 pound ham, fat removed and cut up (3 cups)
1 onion, chopped
46 ounces canned tomato juice
3 carrots, cut up

Instructions

Bring peas to boil in the two quarts of water. Add cut up ham pieces, chopped onion, tomato juice and carrots. Bring to boil again. Cook on low heat until peas have dissolved, two to three hours.
