Waikiki Chicken

Ingredients

1 broiler-fryer chicken, cut up
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons oil
1 cup crushed pineapple, undrained
1 cup barbecue sauce
1 tablespoon cornstarch
1/2 teaspoon ginger

Instructions

Coat chicken pieces in seasoned flour and brown in oil in a 12 inch skillet or electric fry pan. Drain off excess oil. Combine pineapple, barbecue sauce, cornstarch and ginger; pour over chicken in skillet. Cover and simmer 30 minutes or until chicken is done.

Makes 4 servings.
