Broccoli Cornbread

This recipe was sent to me by my sister.

Ingredients

1 cup chopped onion
10 ounces broccoli
3 eggs or 1 cup egg substitute
1/2 cup margarine, melted
3/4 cup cottage cheese
1/2 teaspoon salt
8-1/2 ounces corn muffin mix

Instructions

Combine onion, broccoli, eggs, margarine, cottage cheese and salt. (You may want to chop the broccoli some more.) Stir in the muffin mix until moistened. Spray 9x13-inch baking dish with non-stick spray. Bake in 400 degree oven 20-30 minutes, until desired brownness. Makes 12 servings
