Deep Purple Eggplant

Ingredients

1 to 2 pound eggplant
2 cups flour
3 eggs, beaten
2 cups of dry bread crumbs or crackers very fine
2 sticks margarine, melted
1/4 cup of salt
Seasonings: Salt, pepper, seasoning salt and celery salt

Instructions

Peel eggplant and slice 1/3 inches thick. Soak in cold water and 1/4 cup salt for four to eight hours; drain well. Dredge eggplant slices in flour, beaten eggs and breadcrumbs. Put on ungreased cookie sheet. Sprinkle slices with seasonings and melted margarine. Bake at 400 degrees for 30 minutes.
