Scalloped Cauliflower

1 large head of cauliflower
3 hard cooked eggs
2 cups medium white sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup buttered bread crumbs
1/4 cup grated cheese, Velveeta or American

Break the head of cauliflower into flowerettes and cook in salt water until tender. Drain. Place in alternate layers of cauliflower, diced eggs and white sauce in a greased 1-1/2 quart casserole. Place a layer of buttered bread crumbs and grated cheese on top.
Bake at 375 degrees for 25 minutes uncovered. The cheese may be melted into the white sauce and only the buttered bread crumbs used on top if desired. Serves 6.
