Potato Fritters

Ingredients

3 large potatoes
3/4 cup powdered sugar
Lemon or orange extract flavoring
3/4 cup flour

Instructions

Peel potatoes and boil in salted water. Mash them, add powdered sugar, a little flavoring to taste. Allow mixture to cool. Add flour and knead the dough until it is very firm. Spread the dough with a rolling pin and cut with a biscuit cutter. Fry in deep fat or oil (360-370 degrees) until brown, drain on paper towels. Can sift some powder sugar over them.
