German Apple Cake

1/2 cup margarine or butter
1 cup sugar
2 eggs, separated
1/2 cup milk
1 cup flour plus 1 tablespoon
1 teaspoon baking powder
1 teaspoon lemon extract
2 medium cooking apples, cut in small slices

Mix butter, sugar and egg yolks together. Sift and measure flour. Add flour and baking powder alternately with milk. Add lemon extract. Fold in beaten egg whites last. Grease 8x8-inch square pan with margarine or butter wrapper. Pour cake mixture into pan. Stick apple slices into cake batter about an inch or two apart. Sprinkle tops with granulated sugar. Cook for 1 hour at 325 degrees. Serve hot or cold.
