Cauliflower Parmesan

1 head cauliflower
1/2 cup water
1 teaspoon salt
1 teaspoon oregano
1 can (14.5 ounces) chopped tomatoes, drained
2 eggs, slightly beaten
1 can (10.5 ounces) cheddar cheese soup
1/2 cup Parmesan cheese

Cut up the cauliflower and steam it for five minutes. Mix the cooked cauliflower and other ingredients in a large bowl. Spray a 2-quart casserole with cooking spray. Add the cauliflower mixture to the dish. Bake uncovered at 350 degrees for 30 minutes.
