Carrot Nut Bread

Bread will freeze well.

Ingredients

1 cup sugar
3/4 cup liquid shortening
2 eggs, well beaten
1-1/2 cups flour
1 teaspoon cinnamon
1 teaspoon soda
1/2 teaspoon salt
1 teaspoon vanilla
1-1/2 cups carrots, chopped
1/4 cup nuts, chopped

Instructions

Mix sugar and shortening. Add eggs. Add flour, cinnamon, soda, salt and vanilla to mixture. Stir in carrots and nuts. Bake in loaf pan at 375 degrees for 1 hour.
