Sweet Potatoes with Maple-Ginger Cream

4 sweet potatoes
1/2 cup sour cream
2 tablespoons maple syrup
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/4 cup chopped pecans, toasted


Pierce sweet potatoes several times with a fork and place on a baking sheet. Bake at 375 degrees for 1 hour. Stir together sour cream, syrup, salt and ginger. Spoon over split baked potatoes and sprinkle with pecans.
