Scalloped Spinach

1 package (10 ounces) frozen spinach
2 eggs, beaten or 1/2 cup egg substitute
1/4 cup part-skim or low-fat Cheddar cheese, shredded
2 tablespoons onion, chopped
1/2 cup skim milk
1/8 teaspoon black pepper
1/2 cup whole wheat crackers, crushed
Nonstick cooking spray

Preheat oven to 350 degrees.
Cook spinach according to package directions and press through a coarse sieve into a bowl. Add eggs, cheddar cheese, onion, milk and pepper.
Mix and pour into a 1-quart baking dish coated with nonstick cooking spray. Cover with cracker crumbs. Bake for 20 minutes.
