4 cups potatoes, thinly sliced
2 cups onions, thinly sliced
2 cups tomatoes, sliced
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 cup part-skim cheddar cheese, shredded
Alternate layers of potatoes, onions and tomatoes. Lightly season each layer with pepper and garlic powder. Place in oven for 30 minutes. Top with cheese at the end of the cooking time.
Remove from oven and serve immediately
Note: Can substitute potatoes with thinly sliced zucchini.
