I love 7-minute icing, but hate cooking it. This is easier and just as good.
1 cup white sugar
1 egg white, unbeaten
1/4 teaspoon cream of tartar
1/2 cup boiling water
1 teaspoon vanilla
Combine first 3 ingredients in a small bowl; at low speed add boiling water. Turn mixer on high. Mix until icing stands in peaks. Add vanilla, beat 30 seconds more.
This stays soft. It can be used to cover cream pies. Do not bake.
