Scalloped Carrots

1 cup ground or shredded raw carrots
1 cup cracker crumbs
2 tablespoons finely diced onions
1 cup milk
1 teaspoon salt
1/8 teaspoon pepper
2 eggs, separated
5-7 raw bacon strips


Preheat oven to 350 degrees. Grease a 7 x 11 inch baking pan. Combine carrots, cracker crumbs, onions, milk, salt, pepper and slightly beaten egg yolks. Fold in stiffly beaten egg whites. Pour in pan and top with bacon strips. Bake uncovered for 45 minutes or until set. (Recipe may be doubled and baked in a 9 x 13 pan.)
