Potato Spinach Casserole

Ingredients

6 to 8 large potatoes peeled, cooked and mashed
1 cup (8 ounces) sour cream
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons chives, chopped or green onion tops
1/4 cup butter
1 package (10 ounces) frozen chopped spinach, thawed and well drained
1 cup (4 ounces) Cheddar cheese, shredded

Instructions

In a large bowl, combine all ingredients (except cheese), and spoon into a greased 2-quart casserole. Bake uncovered at 400 degrees F. for 15 minutes. Top with cheese and bake 5 minutes longer. Serves 6-8.
