Fran's Oreo-Peppermint Jello Salad

Ingredients

1 package (6 ounces) lime-flavored gelatin
2 cups boiling water
2 cups cold water
1/4 teaspoon peppermint extract
4 ounces Cool Whip
8 finely crushed Oreo cookies

Instructions

Dissolve gelatin in boiling water. Add cold water and peppermint extract. Chill until slightly thickened, about 1-1/2 hours. Measure 1-3/4 cups gelatin; pour into a 5x9 inch loaf pan and chill about 5 minutes. Blend Cool Whip into the remaining gelatin. Carefully spoon 1/3 of the creamy mixture into the pan. Sprinkle with half the cookie crumbs. Repeat these 2 layers and spoon the remaining creamy mixture on top. Chill until firm, about 4 hours. Unmold and garnish with additional whipped topping and cookie crumbs, if desired. Makes 6 cups or 10 to 12 individual servings.

1938 -- 75 years ago: Mrs. Thomas Ackles, of Rock Island, has been elected president ofthe Playcrafters for the next season. She succeeds Warren Leonard.
1963 -- 50 years ago: Some 8,000 people filed through the gates of Rock Island Arsenal on Saturday to view a display of a part of the nation's armed strength. The occasion was theannual observance of Armed Forces Day.
1988 -- 25 years ago: Willis Kuschmann, of Moline, who already has won his laurels as oneof the most artistic men in the Quad-Cities area, has a new hobby. He is deeply involvedin miniature railroading. At the age of 88, when many other seniors are dozing in theirchairs or sitting before the television, Mr. Kuschmann is planning and working on hiscollection.
