Zucchini Bread

Ingredients

2 cups chopped zucchini
3 eggs
1 cup vegetable oil
2 cups sugar
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons cinnamon
1/4 teaspoon baking powder
3 teaspoons vanilla
1/2 cup chopped nuts (added after blending)

Instructions

Chop zucchini and put in blender or grate finely. Blend until smooth. Add remaining ingredients and blend well. Pour into greased and floured loaf pan (1 large or 2 small) and bake 1 hour (or until knife comes out clean) at 325 degrees. Zucchini can be grated or chopped and frozen without spoilage.
