Rhubarb Bread

Ingredients

1 cup sugar
1-1/2 cup diced rhubarb
1 cup brown sugar
2/3 cup canola oil
1 cup buttermilk or sour milk
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
2-1/2 cups flour
Topping:
1/2 cup sugar
1 teaspoon cinnamon
1 tablespoon butter

Instructions

Mix 1 cup sugar and rhubarb and set asisde. Combine brown sugar, oil, buttermilk, salt, baking soda, vanilla and flour. Add rhubarb mixture. Mix well and pour into loaf pan. Bake at 350 degrees for 35 minutes. Topping: Combine 1/2 cup sugar, cinnamon and 1 tablespoon butter. Sprinkle topping on bread when it comes out of the oven.

1964 -- 50 years ago: The Argus "walked" to a 13-0 victory over American Container Corporation last night to clinch the championship of Rock Island's A Softball League at Northwest Douglas Park.
1989 -- 25 years ago: The Immediate Care Center emergency medical office at South Park Mall is moving back to United Medical Center on Sept. 1. After nearly six years in operation at the mall, Care Center employees are upset by UMC's decision. The center is used by 700 to 800 people each month.
