Rhubarb Bread

1 cup sugar
1-1/2 cup diced rhubarb
1 cup brown sugar
2/3 cup canola oil
1 cup buttermilk or sour milk
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
2-1/2 cups flour
Topping:
1/2 cup sugar
1 teaspoon cinnamon
1 tablespoon butter

Mix 1 cup sugar and rhubarb and set asisde.
Combine brown sugar, oil, buttermilk, salt, baking soda, vanilla and flour. Add rhubarb mixture. Mix well and pour into loaf pan.
Bake at 350 degrees for 35 minutes.
Topping: Combine 1/2 cup sugar, cinnamon and 1 tablespoon butter. Sprinkle topping on bread when it comes out of the oven.
