Appetizer Water Chestnuts

2 cans (8 ounces each) whole water chestnuts
1/4 cup soy sauce
3 tablespoons brown sugar, plus more
1 pound good bacon, strips cut into thirds

Blend soy sauce and sugar in a glass bowl and marinate chesnuts overnight. Roll individual chestnut pieces in brown sugar and wrap with small pieces of bacon. Secure with a wooden toothpick. Place in shallow baking pan and bake at 400 degrees for about 20 minutes. Drain on paper towel before serving.
