Cool and Fruity Cashew Mandarin Salad

Ingredients

1 package (10 ounces) hearts of romaine salad mix
1 can (11 ounces) mandarin oranges, drained
1 cup lightly salted cashews
¾ cup shredded cheddar cheese
¾ cup shredded smoked Swiss cheese
½ cup dried cranberries
½ cup diced apples
½ cup diced pears
Salad dressing of your choice (poppy seed salad dressing works well)

Instructions

In a large salad bowl combine the salad mix, oranges, cashews, cheeses, cranberries, apples and pears. Drizzle with dressing; toss to coat. Serve immediately. Makes 10 servings.
