Banana Bread

Freezes well. I buy over-ripe bananas at our local Mr. G's Grocery Store by the sack full.

Ingredients

1/2 cup oil
1 teaspoon vanilla
1-1/2 cups brown sugar
2 eggs, beaten
2 cups flour
1 teaspoon soda
1/2 teaspoon salt
1/4 cup sour milk
1-1/2 cups banana pulp (2 or 3 bananas)
1/2 cup nuts (optional)

Instructions

Mix the oil, vanilla, brown sugar and eggs. Stir in the flour, soda and salt alternately with the milk and bananas. Bake in a greased loaf pan at 350 degrees for 60 minutes. Turn off oven and leave in oven 10 minutes more.
