Brown Rice Florentine

1 cup uncooked instant brown rice
1/2 cup chopped onion
1/2 cup chopped celery
2 tablespoons margarine
1 (10 ounce) box frozen spinach, thawed, drained and chopped
1 (10.5 ounce) can cream of chicken soup
3/4 cup mayonnaise
1/2 teaspoon salt
3/4 teaspoon curry powder
1/4 cup chopped pimentos
3 cups cooked chicken, diced
1/4 cup grated Parmesan cheese

Preheat oven to 350 degrees. Prepare rice according to package directions. In a skillet, saute onion and celery in margarine until tender. Add spinach; cover and simmer until heated through. Mix soup, mayonnaise, salt and curry powder in a medium bowl. Add spinach mixture, pimentos and half the soup mixture to the rice and mix well. Pour into a greased 9X9 baking dish. Arrange chicken on top of rice mixture. Combine cheese and remaining soup mixture and pour over chicken. Bake about 15 minutes, or until bubbly.
