Apricot Bars

Ingredients

1 cup oleo
1 cup sugar
1 egg
2 cups flour
1 teaspoon baking powder
1 1/2 cups coconut
1/2 cup chopped walnuts
1/2 teaspoon vanilla
18-ounce jar apricot preserves

Instructions

In a bowl, cream the oleo and sugar. Then add the egg and mix well. In a seperate bowl, mix the flour and baking powder. Gradually add the flour mixture to the butter mixture. Add the coconut, walnuts and vanilla. Mix thoroughly. Press 2/3 of the dough in a greased 13 X 9 pan. Spread the preserves over the dough. Use remaining dough to crumble over the preserves.

Bake at 350 degrees for 30 to 35 minutes or until golden brown. Let cool and cut in squares.

1963 -- 50 years ago: Some 8,000 people filed through the gates of Rock Island Arsenal on Saturday to view a display of a part of the nation's armed strength. The occasion was theannual observance of Armed Forces Day.
1988 -- 25 years ago: Willis Kuschmann, of Moline, who already has won his laurels as oneof the most artistic men in the Quad-Cities area, has a new hobby. He is deeply involvedin miniature railroading. At the age of 88, when many other seniors are dozing in theirchairs or sitting before the television, Mr. Kuschmann is planning and working on hiscollection.
