Homemade Peanut Brittle

3 cups sugar
1 cup water
1 cup light corn syrup
1/4 cup butter
1/4 teaspoon salt
2 cups raw peanuts
1 teaspoon vanilla
1 teaspoon baking soda

In a large, heavy skillet, boil the sugar, water and corn syrup to hard-ball stage on a candy thermometer. Add butter and salt. Add peanuts and stir. Allow this mixture to cook to hard-crack stage on a candy thermometer (285 degrees F.). Remove from heat and add vanilla and baking soda, stirring rapidly. Pour into a buttered pan. Thin out quickly while candy cools. After it's cool, break into pieces.
