Cheddar Salmon Quiche

Pastry of your choice to fit a 9-inch pie pan or quiche dish
FILLING
14 3/4-ounce can salmon, drained, bones and skin removed
1 cup shredded Cheddar cheese
1/4 cup chopped green pepper
1/2 cup chopped onion
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
3 eggs, beaten
1 1/4 cups milk or half-and-half

In a bowl, combine salmon, cheese, green pepper, onion, flour, salt and pepper. Spoon into crust. Combine eggs and milk or half-and-half; pour over salmon mixture. Bake 50-55 minutes at 350 degrees F. or until knife inserted in center comes out clean. Let stand 10 minutes before cutting. Serves 6.
