Apple-Raisin Bars

2 cups all-purpose flour
2 teaspoons baking powder
1-1/2 teaspoons cinnamon
1/2 teaspoon salt
2 cups packed light brown sugar
2 eggs
1/2 cup butter or margarine, softened
1 teaspoon vanilla extract
1-1/2 cups diced golden delicious apples
3/4 cup raisins

Heat oven to 350 degrees. Coat liberally a 13x9x2-inch baking pan with non-stick cooking spray. Set aside.
In a medium bowl, whisk together flour, baking powder, cinnamon and salt. Set aside.
In a large bowl with an electric mixer, on medium speed, blend sugar, eggs, butter and vanilla for 3 minutes until very smooth.
Reduce speed to low and gradually add flour mixture for 2 minutes. Stir in apples and raisins and spread in prepared pan.
Bake at 350 degrees for 35 minutes or until toothpick in center comes out clean. Cool completely before cutting into bars.
Makes 12 large bars.
