Banana Nut Bread

1 cup light brown sugar
1/2 cup vegetable oil
2 eggs, well beaten
3 ripe bananas, mashed to puree
1 teaspoon baking soda
4 tablespoons buttermilk
2 cups flour
3/4 cup chopped walnuts

Cream together sugar and vegetable oil. Beat in eggs. Stir in remaining ingredients. Pour into a greased 8x4x2-inch loaf pan. Bake at 350 degrees for 1 hour.
Check with toothpick for doneness. Remove from stove for 5 minutes, than take out of loaf pan and set on a wire rack to cool completely.
Makes 1 loaf for 6 to 8 serving pieces, depending on how thick the slices are cut.
