Jim Dandy Muffins

1 2/3 cups flour
2 teaspoon baking powder
1/2 teaspoon salt
2/3 cups sugar
1/3 cup oil
1 egg
2/3 cup milk
1/3 cup drained crushed pineapple
1/4 cup apricot jam
2 tablespoon chopped nuts

Stir together flour, baking powder, salt and sugar. Add oil, egg, milk and pineapple. Drop batter into 12 greased muffin cups. Fill cups only half full. Combine jam and nuts, place a teaspoon of this mixture on top of each muffin.
Bake at 400 degrees for 20-25 minutes. Remove from pans immediately.
