Broccoli and Cheese Muffins

Ingredients

2/3 cup cooked, chopped broccoli, drained
2/3 cup shredded light cheddar cheese
1/4 cup egg substitute, thawed (do not use frozen)
1 cup skim milk
2 cups light muffin mix
Vegetable cooking spray

Instructions

Preheat oven to 425 degrees. Combine broccoli, cheese, egg substitute and milk. Add broccoli-cheese mixture to dry muffin mix. Stir just until moistened. Spray muffin tins lightly with vegetable spray (spray for three seconds, three times). Fill each muffin well 2/3 full. Bake 15-18 minutes. Muffin is done when a clean toothpick inserted in center comes out clean.
