Evelyn Schmitt's Ginger Creams

Delicious. Evelyn is now deceased, but her grandchildren love her cookies.
This is a melt in your mouth cookie. Grandkids have rolled and cut this out every Christmas for 50 years.

1/2 cup brown sugar
1/2 cup lard
1/2 cup molasses
1 1/2 teaspoons baking soda
1/2 cup hot water
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon ginger
2 tablespoons cocoa
4 cups white flour

Mix brown sugar, lard and molasses. Add soda to hot water and pour into batter. Stir in remaining ingredients. Chill 1 hour.
Batter needs to be rolled out and cut with cookie cutter.
Bake at 375 degrees for 8 to 10 minutes on parchment paper. Cool. Frost with butter cream frosting.
