Honey Nut Bars

Ingredients

1-1/2 cups butter (three sticks) divided, room temperature
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla
2 cups all-purpose flour
Topping:
1/4 cup honey
3/4 cup light brown sugar, firmly packed
1/4 cup whipping cream
1 can (20 ounces) lightly salted mixed nuts

Instructions

Preheat 350 degree oven. Butter 9x13-inch baking pan; set aside. In large mixer bowl, beat one cup (two sticks) butter with granulated sugar until light and fluffy; beat in egg and vanilla. Stir in flour until well mixed. Press evenly into prepared pan. Bake until edges are slightly brown and center looks dry, around 15 minutes. Remove to wire rack to cool. Maintain oven temperature. Meanwhile, in a heavy, medium-sized saucepan over medium heat, melt remaining one cup (one stick) butter with honey, stirring to mix well. Stir in brown sugar; bring to a boil for exactly two minutes without stirring. Remove from heat. Stir in cream and nuts. Immediately spoon caramel nut mixture evenly over crust. Bake until caramel bubbles, around 10 minutes. Cool completely on wire rack. Cut in 2x2-inch pieces. Store in tightly covered container at room temperature. Serve with other favorite holiday sweets. Makes 24 bars.
